Decreasing plasma cholinesterase is cited as a reaction to MSG by Sherry Rogers in her book entitled, No More Heartburn - Stop Pain in 30 Days Naturally. (The title is deceiving -- it covers so much more -- I am reading all of her books at one time and they are very helpful.) She says that plasma cholinesterase is an enzyme crucial in nerve chemistry and can mimic all the side effects of PESTICIDE POISONING!
No wonder we feel so terrible after a reaction!.
Here is a quote: "The resulting massive histamine relase can also cause many symptoms, from migraine or paresthesias (numbness and tingling) to chest pain mimicking a heart attack, depression, or brain fog."
At it says that "Cholinesterase is required for normal nervous function".
Interesting, yes?
