I'm no expert, but I believe that celiac is an autoimmune disease where the MSG thing is a neurotoxin thing that affects the brain, and the blood brain barrier, causing all kinds of craziness to result.
Just a guess,

Wheat gluten is a protein which causes allergic reaction, whereas glutamate is an amino acid that does indeed have neurotoxic effects.
Since glutamate is used by the body and isn't a protein, it doesn't cause allergic reactions (unless you count histamine release caused by glutamate acting directly on mast cells, bypassing the immune response). The wheat protein causes the immune system to react violently in someone with Celiac's.
They are two different things, but there is no reason why someone with Celiac's can't also be sensitive to MSG. It's a good bet that their diet is pretty devoid of processed products, though, so they may not be getting much MSG.
