Short of making a DIY Ricotta, I finally found a 3 brands that don't contain MSG (guar gum, carrageen, etc) that I've tried & have had no reactions to.

Trader Giotto's (Monrovia, Calif)
Sold exclusively @ Trader Joe's

Bought @ Western Beef, an E Coast Latin grocer)

Supremo Italiano is the brand our local Greek restaurant uses. But that appears only to be available from Restaurant Depot, which is not open to the public.

Yes, I know.....the Trader brand contains Whey.
But I can only assume it's the real magilla & not a processed whey.....because I did not have any reactions to it. Your mileage may vary.
