Hi - thought I'd start by sharing my story. I read an article on 'umami' and decided I would use soy everything, natural product, good for my health and tasty too. Work was very stressful. I had family visit that added to it and was not sleeping well. I was so tired one morning that I told my boss I was going to take a nap and be back online later. And I basically never got up again for a month. I was so weak, I would walk from the couch to the table to try and eat with my family, but it took all my energy to get there. I was then too weak to lift my arms to feed myself. So I was out of work for a month, not even able to stand long enough to shower. I had to sit on a little platic chair. If I walked a few feet my muscles would scream like I was running a marathon and be sore like I had. My muscles twitched constantly and my nerves tingled and it was worse at night, keeping me wake. Since I was too weak to cook for myself, I had friends bring me prepared salads and I ate that and canned soup. I went to docs - first they said it was mono, then no it wasn't, maybe some nameless virus, but I'd now had it too long for viral meds to help, blah, blah, blah. I started doing my own research and became convinced I had ALS, tested for that and it was not (thank god). But that did lead me to glutamate and looking back I could see how I had systematically increased the amount of msg and glutamate in my diet, especially my daily intake of soups and salads - making and keeping me sick. So I cut out all processed foods and foods containing high amounts of naturally occurring glutamate from my diet. After a month (was very discouraging as I was hoping for much quicker results!) I finally started to see improvement. The symptom that lingered longest and recurs whenever I get too much glutamate is muscle twitching. A year later I thought I could occassionally eat some amount of glutamate, but have confirmed that if I want to feel well all the time, I have to refrain from it completely and most likely, indefinitely. I had Japanese food as a treat. On the way home I looked in the mirror to find my face flushed bright red. I woke up with a headache and felt under the weather for two days - no more "treats" for me. So now I feel great. I have cut out all glumate from my diet possible as well as taking bentonite clay for detox, as I found a clay bath when I was most ill made me feel better. I believe I have metal sensitivity as well that may have been a contributing factor, so am avoiding fish. I am disappointed to learn that organics may be the best we can get, but may not be good enough. So the best I can do is to try and stay detoxed from the poisons added to our food supply. I eat lots of beans and whole grains and though I don't trust them fruits and veggies too. I eat meat as well, but am more careful how I cook it. Also started cooking all my food in either steel or glass (in the micro). My goal is no processed foods whatsoever and as I like to say, if God didn't make it, I don't eat it! Anon, thank you so much for sharing your story. I wish everyone with those symptoms could read it begin to reclaim their health as you have. I really believe that millions are suffering as you were, and eventually, many of them will end up with serious neurological diseases like Parkinson's. Even though we have to constantly monitor what we eat, we are still the lucky ones.

Thanks, Deb. And you hit the nail on the head, while I was going through all this, my sister was diagnosed with Parkinson's. She is not 50 yet and only 5yrs older than me. And I was just looking into your book - I need recipes! Thanks for that, I intend to buy it online tonight ~ !!

Anon good for you. You will love Deb's book I have used so many of the recipes. They keep me well and my whole family loves them to. It shows them that I am not deprived, but I am saving my own life. Good luck and keep on your path to health. Mariann
