This is a great recipe for people that have problems with grains, baked goods, etc....And it is cool and refreshing.

Lemon Italian Ice

4 cups water
2 to 3 cups sucanat or organic sugar
2 cups lemon juice (freshly squeezed)

Heat water and sugar on the stove until the sugar is dissolved (make a simple syrup). Take off the heat and stir in lemon juice. (Taste to make sure it is sweet enough - it will not taste as sweet once frozen)

Pour mixture into glass or ceramic shallow baking dish and put in freezer. After two hours check to see if frozen. (The sugar will prevent it from freezing too hard). Once it is frozen, use a fork to scrape it into a slush consistency. Enjoy.

You can make it in an ice cream machine, too. I've used some stevia and agave with less sugar just to cut down on carbs. I use 1 cup organic cane sugar, 1/3 cup agave, and 1/2 t. of stevia. Taste and adjust sweetness. Thanks for sharing your recipe, Kristy. :-)
