Hi everyone, I'm new here and wondering if making your own bone broth soup would be acceptable from an msg point of view. I know glutamates are formed in making broth, but is it a high level?

hi, i can only speak from my experience that i have no problem with home made broth. But i think it would vary from person to person depending how sensitive you are. Personally, so far for my family, it only seems to be added msg and its aliases that cause us problems. Oh and cooked tomatoes are a no go for my little girl.

Anonymous, I am very sensitive to msg and it;s cousins. I make my own broth all the time, I just limit the time I cook it to 40 minutes or so, no problems then. Mariann

Anonymous, I do fine with bone broths that I make but I don't add any acidic solutions like vinegar to it and cook it very carefully (don't boil it) so that it cooks very slowly. I am also very careful to use bones from a safe source like my grassfed beef farmer so there is no citric acid or lactic acid on the bones (both will increase the amount of free gluatamic acid created).
