I have read in Debby's book that when corn is processed, it can cause headaches. How about eating frozen corn? Is that all right?

Processed refers to major changes in the foods natural composition. Companies use hydrolysis (heat and water and sometimes chemicals), fermentation, autolysis, enzymes, dehydration, etc. to change the taste, use, texture of foods. These processes also denature naturally occurring glutamate, creating free form glutamate, as found in MSG. I eat fresh and organic frozen corn..and Trader Joe's brand without a problem. If I were to boil fresh corn at high heat for a long time, I might react to that.
