I have a recipe that I make that is done in the microwave & reheats well. Doesn't make much washing up & is quick & easy. It is also good to take to bring a plate meals. Please note that these ingredients are things that I can eat. You may have to adjust it for your requirements. 1 large or 2 smaller carrots, medium-large dice 1 medium onion Add about 1 tablespoon of water & cook, covered for 3 minutes on High. To this add: 1 cup Arborio rice 2 cups stock/water chopped up vegetables (can use small packet of mixed frozen) I use large stick of celery & french beans. Cook on High for 15-20 minutes (time depends on amount of vegetables). Rice should be cooked & most of liquid absorbed. Then add 1 tin of drained tuna (I like the naturally smoked John West one but the unflavoured one is nice too), cover & leave for 5 minutes. A friend makes this using cooked chicken & bacon, or a tin of tuna with lemon & cracked pepper. I also had this the other night with a Zucchini cut lengthwise & fried & it was really yummy. |
