My mom's boyfriend is a fantastic cook. He smokes meats, and we've noticed that some of them are packed in a "12% solution." 12% of WHAT? I can't find any information on the internet about this mystery solution. One threat I found says that it's a sodium based meat tenderizer. I would love to know more. Any information is greatly appreciated.

Ada, someone in this linked discussion claims that the "natural flavoring" it's seasoned with is just rosemary extract, but I don't buy it.

but if this meat is 12 % solution then I am sure that is sodium laced and who knows what sodium salts they are using
