I'm on Day: 1 of no potato chips and corn chips.

I guess it makes no sense to be having 4-6 ounces of chips each day, and trying to make conclusions about other foods like cheese.

I bought some yams at the supermarket, and microwaved one for 9 minutes, added some coconut oil, very tasty!

at $0.69 cents/pound, it's way cheaper than $4 for a 12 ounce bag of chips (and probably much healthier), and doesn't risk possible cross contamination issues.

We really enjoy microwaved or oven baked potato chips. If you have a slicer on your food processor, its really fast to slice one potato, then microwave it for 6-7 minutes for the best tasting potato chips ever. I may get a cheap slicer. I do have a fancy food processor, but it's too much work for chips.

Emily, Your recipes sound good. One suggests olive or canola oil. Just curious can you get canola oil that isn't GM?

Thanks, I hope you enjoy the recipes. Unfortunately, no you canít get canola oil that isnít GM. Iíve been trying to find a good replacement for canola oil and have settled with using pure olive oil in its place. I still occasionally use canola oil but know I need to get rid of it once and for all. I know Deb A. has had success with safflower oil but I canít find a local resource to buy it for a decent price (Iíve found it at one location but it was more than olive oil).

I have a Cuisinart 11 cup food processor and have loved it. I use it at least twice a day and like that it has a thin blade that is perfect for potato chips and sandwich toppings like tomatoes, peppers, cucumbers, etc.
