okay, now after I have been off of msg, any food additives or preservatives, gluten, and all that jazz for 6 months, I am NOW starting to notice a difference. I am actually giddy!I have more energy, so I can exercise even the smallest amounts here and there, and the weight is coming off faster!!!!! I see the light at the end of the tunnel.
P.S. a big thank-you to my friend on this forum that suggested to eliminate SOY, wow! that was the clincher!

Wow Star, thats so good to hear. Long may your good health continue!! I get out of bed on a daily basis and marvel at my good mood and energy levels. To think for years i was "just not a morning person"..hehe...I didnt even start this msg free thing for myself but for my youngest daughter. Our whole family have benefited grately. Star, have you read the book, Nourishing Traditions by Sally Fallon? It goes into soaking grains and nuts to help with digestion and nutrient absorption. It also talks about naturally probiotic-rich foods and nutrient density in foods. It helped us tremendously when we were learning to cook without additives and it really is a healthier way of eating. I know that I couldn't tolerate some nuts and grains until I started soaking them so it must make a difference in how easy it is to digest them and extract the nutrients from them. If you ever decide to try adding gluten back into your diet, I would suggest using the methods outlined in this book for a better chance of success.
I'm so happy to hear about your improvements. You did the hard work, now you get to reap the rewards! Congratulations.

hello friends. thanks so much for your words of encouragement! It is hard... especially because we have just been on a multiple day road trip and I am now staying with my husband's family!!!
also word out to the corn allergy crew... you might have another member! the one good thing about the road trip was that I had lots of time to monitor my body after I ate things.
I had some homemade corn tortillas, and I noticed feeling a bit more tired then usual. And then, I had some corn tortilla chips, with otherwise safe ingredients, OMG high anxiety, emotional roller coaster! Wow, it is so incredible looking back. Sometimes I would have popcorn popped from the seed at home with oil and I would not have any reaction, other then awhile ago now, I had a similar reaction - out of this world anxiety! So, I will try to stay clear from corn for a good while, and see if the anxiety simmers down! As soon as I can save some money I am going to a naturopath and getting allergy tested. I am looking forward to this.
I really value everyone's support here. It's hard, even my own husband struggles to get it. Respects that I need to do what I need to do, but at times, it only times that extra heavy sigh to feel isolated amongst seemingly everyone else that can eat a normal meal.
For now, I am looking forward to a meal of plain salad, and whatever plain veggies that my inlaws can drum up! ha, ha..
I also am going to do a search as I am sitting here, because I think that I am recalling that some bag salads are rinsed in citric acid. That would explain some of my reactions to the salads. I just can't digest them!!!
I know I am going on an on, but it is so revealing! It actually wasn't my digestion this entire time! These seemingly healthy foods are laced with things that are poisonous to our systems.
Don' worry, I might be coming across as a little discouraged, but really, when the going gets tough.. the tough gets going! I feel so empowered by information right now that I can't be down for too long, and for all I know - it is the after effects of the corn that is making me uncharacteristically teary- eyed! ha, ha...

oh & p.s. thanks Kristy for the advice. I have been craving more nuts lately, but I will soak them. Grains, I am going to stay off until I have lost the weight that I want to, then I will try things once my body has stabilized I totally am going to get that book too, as well as Deb's!!! I still having been able to afford it! long story, but soon!

Star, you can probably find Nourishing Traditions in the library but there might be a waiting list. It says to soak nuts in salted water overnight and dry them in a dehydrator or oven on the lowest temp (maybe with the door slightly ajar to keep it from getting too hot). There is probably a description of NT style nuts online somewhere.

I just got back from a road trip and started off with a 3 day reaction. It had to have come from eating a "Veggie Sub" from Subway. I thought that might be safe. Do they spray their vegetables with something, perhaps citric acid? Or possibly it was the whole grain bread...Any ideas, anyone? I will stay away from Subway from now on. Will pack my own fresh veggies, as I know many of you do. Kaye

Kaye, Don't know what you had on your sub.... but ingredients from Subway's website:

Ive just discovered polish bread here in Ireland. We have a large polish community here. In town we have a new polish shop and their bread is clean. It contains flour, milk, yeast, salt, butter. Thats it. We do fine with it. Not sure if you have any polish brands or shops in the states, but its worth a look if you do. ali
